As the wife of Hassan who runs Wok Kitchen, I have been on the journey with the construction of all the restaurants. Now I want to create a new concept of Indian food I decided to call for Curry Republic. The concept reflects much of my background and upbringing in India.
As you probably know, curry not own spice but a blend of many different spices and a variant of Garam Masala. The variations of curry are as many as there are flavors - endless. Some twenty spices tend to occur more frequently than others. Turmeric is present in all these mixtures, and it is this that gives curry its characteristic orange-yellow color. Here in Sweden the "curry" to denote a large amount of varied Asian cuisine. Common to the dishes called curry is that they are usually heavily spiced, and that they are often såsbaserade.
For all of you who have never been to India, I want to give you my picture and my tastes of the country. Maybe you even so tempted you go there one day, who knows? Before that, I hope to see you at the Restaurant Square and at Curry Republic.
